If I click on 'Show Manager Review to Employees' will it override the pending and in progress manager reviews?

No, it will not override the pending and in progress manager reviews. The 'Show Manager Review to Employees' option will show the manager review to employees after submission of manager review only. In fact, clicking on this action will only open up the checkboxes next to the employees whose manager review is already submitted.
